IF and God forbid it doesn't happen, but IF you had to pick just ONE bike to ride for the rest of your life what one would you pick? You can change components and wheels as you see fit. What bike would it be?

Me I would have to go with my Trek XO2 Cycle Cross. I could mount road tires for pavement, 35 cc knobbies for dirt and gravel, and Nokian Studs for icy roads.

My bikes....Trek 90D, Schwinn 564 (road bike), Surly Pugsley.
Before a year ago, I'd have said the Trek.
Now it's the Pugsley hands down!!!
In my future will be a set of 29er wheels for the none dark months. All in good time though!! ;)

Gotta go with my Cross Check. Ok, so I just finished the build tonight and have yet to take it on it's maiden voyage, but I have high expectations... ;-)

That's just mean, I can't choose, but if pushed it would have to be a MTB of some sort.
You can ride a MTB on the road, but can't ride a road bike off road. Well you can but you'd kill it!
I have quite a few bikes in the garage, some now vintage material. Out of 'em all, ride these the most:
2006 Ibis Silk Carbon. Ultegra build kit. Road bike/nice (and not so) weather commuter.
1997 Ibis Hakkalugi. Old school steel 'cross bike set up with fenders and 25c tires. Mixture of XTR and road parts. Rainy day commuter/road bike. Pull of fenders and install 35c knobbies for dirt use and the occasional cyclocross race.
2010 Sette Razzo 29er. Mixture of SRAM X9/X7. Rockshok Reba fork. Hardtail 29er - my main mountain bike.
Own just one bike? Out of mine, would come down to the Ibis Hakkalugi or Sette 29er. Both can run skinny or fat tires for various use. However, it be tough to do hard core mountain biking with the Ibis 'cross bike. Tough call.
If I had a choice of one new bike to live with. Maybe something along the lines of a Rawland or a 29er mountain bike with drop handlebars.
I hope it never comes down to that - but would be a cool experiment for awhile. I've thought about it before. It's also come up when recommending bikes for friends. If they want to ride road and dirt - I recommend a cyclocross bike or hardtail mountain bike - just lock out the fork and run skinny road tires (26" or 29").
I want Cancellaras cheater bike with that electric motor gizmo in the seattube.
My beloved long-haired black chihuahua, Carlos. By which I mean my Cross Check. Favorite. Bike. Ever. 11 years and still finding new ways to love it.

Need something to use for commuting so fenders/racks are a must.
I'd think a Fatback w/ two sets of 29'er wheels-one w/ road tires and one mountain.

Well, I technically have three bikes (gave two away), but I currently only ride two bikes. As much as I love, love Ruby, I still love the my Trek 3000. I bought that bike when I was still mountain bike racing and it's been a good bike for me....lots of miles on that rugged bike.

For me as a roadie it would have to be a Pegoretti Luigino with full campo set up.
If you allowed me a second choice, it would be my Tifosi Audax/Training bike - as it is the most versatile bike that I own.
I'm a roadie all the way. My Orbea Orca with my DA 7900. I flat out love it. I guess I'll have to move to some place that is warm year round, and has a lot of sweet, smooth asphalt.
